Cooking with Beer - Super Sunday Beer Brat Recipe

Ben Liebenberg / NFL.com
With the Big Game coming up on Sunday, lots of folks are planning their big Superbowl parties.  There’ll be food, of course (check out this recipe for beer and cheddar soup, this recipe for beer can chicken, or this one for Guinness chocolate cake for a few ideas), but more important for us beer fanatics is the type of brew we have available.
I don’t have any extravagant plans for a Superbowl party or attending one this year, so I’ll probably lay low with a homebrewed Citra pale ale or I might pick up some Single Wide IPA before the big game.  I’m feeling a bit hop-starved lately, and I think either one will go with my beer brat recipe (posted below).
What beer will you be drinking at the big game?  Leave a comment below with the beer you’ll be drinking and let us know why you chose it.
Also, what food will you be making at your house?  Do you have a traditional Superbowl party food you always make?  It doesn’t have to be beer-related, of course.  Post it in the comments if you’re willing to share the love.
St. Ange Super Sunday Beer Brats:
Ingredients:
10 bratwurst sausages (can be cheddar brats, brats, spicy brats, whatever)
3-4 bottles beer (or whatever beer you like.  I’ve used anything from Bud Light to Guinness to Boulevard pale ale, but don't go too hoppy or your onions will get bitter.)
1 onion, sliced
1 tbsp Chili Powder
2 tbsp Worcestershire sauce
Salt and pepper
Mustard (I like brown or spicy mustard, but whatever you like)
Ketchup (optional)
sauerkraut or buttered kraut (optional – buttered kraut recipe follows)
kaiser rolls or hot dog buns (optional)
Instructions:
Slice the onion and place it in a large saucepan on the stovetop.  Add the 10 sausages on top of the onions.  In a bowl, mix the beer with the spices and Worcestershire sauce and pour over the sausages.  Add more beer or add water (if you have a limited supply of the precious beer) to cover the sausages.  Heat to boiling.  Reduce heat and simmer the brats for 20 minutes.
While these are simmering, pre-heat your outdoor grill to medium heat.  When the brats are done simmering, take them out to the grill and cook, turning frequently, until they are browned all over, about 8 to 10 minutes.  Remove from heat and place on serving tray, or you can return to saucepan or crockpot to keep warm.
When serving, remove onions from the boiling mixture as an optional topping.  Service on the Kaiser rolls or buns with mustard, onions, ketchup, and sauerkraut or buttered kraut.
Buttered Beer Kraut:
Ingredients:
1 lb. sauerkraut, drained
½ bottle beer
8 tablespoons (1 stick) butter
Instructions:
Place sauerkraut in a medium saucepan over medium-high heat.  Immediately add beer and allow liquid to reduce a bit.  Add butter and cook, stirring frequently, for 5-10 minutes or until the butter is mostly absorbed into the kraut.
